HEST.PULSE (01/2022)
Dear reader

After three months as new Head of Department, I am pleased to present you the first issue of HEST.PULSE in 2022. I would like to take the opportunity here to thank my predecessor Prof. Stephen Ferguson, who as Head of Department steered D-HEST through two difficult years, shadowed by the long pandemic and the tragic loss of our colleague Jay Mitchell. At the end of May, we will present the second James Mitchell Award of Excellence in Collaborative Science in his honor.

Luckily, the pandemic does no longer claim – for now at least – the greatest part of our thoughts. I am very pleased that we are able to offer courses and lectures in full presence, and that researchers and staff are also back on campus. It is good to see that we are moving on and making plans again. One of our plans is to celebrate the 10-year-anniversary of D-HEST with an event at the end of September (Save the date – September 30th!).

I would like to thank all members of the Department for their dedicated work and continued efforts during the past two years under COVID-19 rules, and I look forward to serving as Head of Department, supported by my deputy Prof. Bill Taylor, the members of the department’s Executive Committtee, and the department staff.

Hoping that you will enjoy reading HEST.PULSE, I wish you a good finish of the spring semester.

Kind regards
Laura Nyström
Head of the Department of Health Sciences and Technology

Blended learning course to prepare laboratory classes
In the blended learning laboratory course, students first learn important methods of food analysis in theory in a parallel lecture series and then prepare for the experimental lab work with different materials on Moodle - such as virtual lab experiments, readings, protocols and videos - to then be able to perform the experiments independently in the lab.
An on the ETH Zurich website explains how the course works and includes an interview with Melanie Erzinger from the Laboratory of Food Chemistry:

Integrative molecular roadmap for direct conversion of fibroblasts

A recent Science Advances publication from the Bar-Nur lab details how non-muscle cells convert into muscle stem cells and fibers using a protein called MyoD in concert with small molecule treatment. Utilizing integrative bulk and single-cell multiomics approaches, Inseon Kim, Adhideb Ghosh and colleagues characterized the conversion process and generated cells.

Ubiquitous nutrients suppress appetite and promote movement

A group of researchers led by Denis Burdakov, Professor of Neuroscience at D-HEST, show in experiments on mice that non-essential amino acids act as appetite suppressants and promote the urge to move. Their research provides insight into the neural mechanism that controls this behaviour.

Effect of the hydrophobic phase on interfacialphenomena of surfactants, proteins, and particles atfluid interfaces

In emulsions, like your daily salad dressing, oil droplets are suspended in a surrounding aqueous phase and stabilized by small molecular weight surfactants, particles, or proteins. While the physicochemical boundary conditions of the aqueous phase and the interplay with the stabilizing agents is extensively studied during the last decades.... read more
