| ‘Cook the Science’ is happening again! |
This autumn, Cook the Science, the scientific cooking show at ETH, is entering its third series. Three culinary experts will be joining us in the coming semester. Laura Schälchli, founder of the chocolate manufacturer Laflor, will share her expertise on Switzerland's favourite product, chocolate. Michaela Frank, formerly head chef at Rank, and Patrick Rühs, professor in the Food Structure Engineering Group at ETH Zurich, will demystify the complex world of plant-based proteins. As part of ETH Food Day, we will explore structures and textures in a 'Cook the Science Special Edition' and learn how to cook with tofu, seitan, Quorn and Planted and Beyond products. Last but not least, Sarah Madritsch, formerly bar manager at Igniv, will teach us about the importance of ice in cocktail preparation. Did you know that ice significantly influences the cocktail experience, affecting not only the appearance, but also the viscosity and taste of mixed drinks?
